Grandma’s Cookies healthy upgrade – Olvero Aceite de Oliva

Ingredients

  • 1/2 cup organic white flour
  • 1/2 cup rice flour
  • 1 + 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • 1 tbs milk
  • 1/3 cup honey
  • 1/4 cup butter at room temperature
  • 2 tbs olive oil
  • 1 egg
  • Dark chocolate chopped or chips

Instructions

In a bowl, combine all dry ingredients (flour, cinnamon, baking powder).

In a separate bowl, mix together the butter and oil, beat in the egg with milk and add honey.

Stir the wet into the dry ingredients until it looks blended. Now add as much chocolate as you want!

Spoon cookie size balls onto your baking sheet and bake at 325 degrees Fahrenheit (160 degrees Celsius) for 10-15 minutes.

Your cookies should be soft and will harden a bit once cooled.

Tips

Do

  • Use a golden sweet honey instead of a dark honey so it does not overpower the flavor of your cookies.
  • For this recipe, we use whole milk from cows, but feel free to substitute whatever milk you prefer.

Don’t

  • These cookies do not need to brown on the outside. Cooking them too long will make them firm and dry. The cookies should be cake-like and soft.
