Ingredients 1 cup dried garbanzo beans 1 tsp tahini 5 – 10 spearmint leaves 1/4 – 1/2 cup olive oil Salt 1 small clove garlic peeled Paprika Cumin Lemon Dried hot chili flakes (optional) Instructions 1Soak the garbanzo beans in water overnight or for at least 8 hours.2Drain the water and rinse well.3Put the garbanzos in a pot and cover with about 4 inches of water.4Boil on medium high heat until the beans are soft but not mushy, about 1 1/2 hours.5Once cooled, remove shells with your hands while keeping beans in water so they do not dry out (this is time consuming and optional). 6Add all ingredients to the blender or food processor except for the oil. 7Start blending and add the oil slowly until smooth.8Garnish with paprika, olive oil and mint leaves. Tips Do To save time, cook a large batch of garbanzos and freeze them. When you are ready to make your hummus, let the garbanzos defrost. The rest of the steps are simple and can be done in minutes.
