Hummus

Ingredients

  • 1 cup dried garbanzo beans
  • 1 tsp tahini
  • 5 – 10 spearmint leaves
  • 1/4 – 1/2 cup olive oil
  • Salt
  • 1 small clove garlic peeled
  • Paprika
  • Cumin
  • Lemon
  • Dried hot chili flakes (optional)

Instructions

Soak the garbanzo beans in water overnight or for at least 8 hours.

Drain the water and rinse well.

Put the garbanzos in a pot and cover with about 4 inches of water.

Boil on medium high heat until the beans are soft but not mushy, about 1 1/2 hours.

Once cooled, remove shells with your hands while keeping beans in water so they do not dry out (this is time consuming and optional).

Add all ingredients to the blender or food processor except for the oil.

Start blending and add the oil slowly until smooth.

Garnish with paprika, olive oil and mint leaves.

Tips

Do

  • To save time, cook a large batch of garbanzos and freeze them. When you are ready to make your hummus, let the garbanzos defrost. The rest of the steps are simple and can be done in minutes.
  • While the garbanzos are cooking, a bubbly foam rises to the top. Just spoon this into the garbage or sink.

Don’t

  • There are mixed opinions about this, but we found that salting garbanzos while they are cooking toughens them. Therefore, we do not salt our garbanzos until after they are cooked.
